Directions
 

  • Add all of the batter ingredients into a large bowl and mix well. Gradually add water, stirring until batter is smooth. 

  • Peel the bananas, cut in half and place on a plate. Sprinkle bananas with lime zest, front and back. 

  • In a large frying pan heat peanut oil to 180 degrees. Oil should be at least 5cm deep.  

  • Dip bananas in the batter to evenly coat, then carefully fry in the hot oil for about 2 minutes, until golden and crispy. 

  • Carefully remove the bananas with a slotted spoon. Drain on paper to absorb excess oil then place on a drying rack to slightly cool. 

  • Sprinkle with cinnamon and powdered sugar before serving.

  • 3 bananas (peeled and halved) 

  • Zest of 1 lime 

Batter Ingredients 

  • Flour (120g) 

  • Sticky rice flour (50g) 

  • 2 tsp baking soda 

  • 1/2 teaspoon sea salt 

  • 300ml water 

  • 500ml peanut oil 

  • Powdered sugar 

  • Cinnamon powder
